It is considered as an immortal tree, able to live for 1 500 years, relentlessly rising from the most ancient tree trunks. Olive Oil offers many comestic properties : nutritive, moisturizing, anti-aging, antioxidant, antibacterial, rich in vitamins A,D, E and in linoleic and oleic acids. THE ORIGIN OF WHITE OLIVE OIL During the 18th century, the first Marseille soap makers used raw Olive Oil to create a fragrant and oily soap. Jean-Baptiste Court has the idea of applying to his Olive Oil the very special refining process he used for his Seed Oils up until then. White Olive Oil, the first Rare Oil from Maison Payen, is born in 1730, from the association between the genious of the inventor, the imagination of the assembler and the know-how of the refiner.   A RIGOROUS SELECTION The quality of the White Olive Oil comes first and foremost in the selection of olives : the species are meticulously selected for their exceptional properties. Olives are harvested according to a traditional technique and are exclusively produced by small producers of the Mediterranean Basin, in particular from Tuscany. This translucent virgin oil is transformed right after the harvest, thanks to the specific press and refining Court-Payen method. The "juice" comes with extremely light aromas, and a superior concentration of vitamines, essential fatty acids and active molecules.
